Dutch Herring, also known as Maatjes, are made from young immature herrings that are ripened for a couple of days in oak barrels in a salty solution, or brine. It has a distinct flavor similar to a sardine. It's an oily fish so it flakes off in moist chunks, and the rich fatty components give herring a hearty body that's fulfilling and coats the palate.

Chill at 0°C - 4°C. Consume within 7 days.
To freeze; place the fish straight in the freezer upon delivery and aim to consume within 3 months.
TIP: Write the date on the packaging before freezing.
