These select sashimi Hokkaido scallops come from the nutrient-rich “Sea of Okhotsk” fishing grounds, known for producing one of the best-tasting scallops on the planet. Revered for its rich but delicate flavor, the Hokkaido scallop is a precious ocean gem that will shine, prepared to consume raw, seared, or poached.
These premium scallops are prized for their fresh, sweet ocean flavour and firm yet meltingly tender texture. Hand-graded to ensure consistency in size, they are classified as dry scallops and have a natural 83% moisture content.
They have an incredibly deep umami flavor and a texture that is uniquely firm. While domestic scallops, when cooked perfectly, can provide a silky almost custard-like delicate texture, these Hokkaido Japanese Scallops have an awesome dense, steak-like flavor profile.
